The offset feature of this knife provides maximum grip clearance between hand and cutting surface while providing optimal leverage and keeping knuckles out of harm's way. The scalloped blade cuts easily through crisp bread crusts without compressing the delicate interiors.

The German 1.4116 stainless carbon alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge.
This knife line is one-piece, hot-drop hammer forged, which produces the strongest blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 57-58.
The three-step, 15° Elite edge is hand stropped on a cloth wheel, creating the sharpest possible cutting surface on an edged tool.
The bolsterless heel simplifies all cutting, sharpening and honing tasks, making use of the entire blade from heel to tip.

Hand-wash with warm water and a mild detergent; rinse and dry immediately.

This knife is now my new favorite knife. It has lived up to my expectations and more! Not only does it cut through thick, crusty sourdough like it was butter, but it then turns around and gives me perfectly sliced tomatoes as thin or thick as I desire. What a great knife! The offset handle is very ergonomic. The blade is very efficient, and it has a wonderful balance. This knife helps me to work from elbow and upper arm; not from my wrist and hand. The handle could be bigger. I like to carve my knife handles to fit my hand. The flexibility vs. stiffness of this blade strikes an elegant balance.
