"I have the perfect collection to use at work. 6"boning knife, 8" braker knife and the 10" butcher knife. They have a large handle with a good pommel. Even when my gloves and the handles are gummed up with meat, the grip stays solid. No issues with the sharpness, as they cut clean and smooth. I will definitely be purchasing more when I can. (I'm thinking the Overland)"

"I work as a meat cutter. Fast paced environment cut as much as you can as quick as you can. I love this knife, good weight not to heavy. Handle is great, a bit thicker near where the blade meets the handle perfect gripping point for all types of grip positions. This is my second 10in scimitar from messermeister. I purchaced the second to have a spare to rotate thru the week. I sharpen with the four sided diamond rod and ceramic rod, i use a fine steel thru the day. The edge hasn't let up after years of abuse."
"The blade is fine, no real complaints there except I like to thin my new blades a bit so I would like to see a version without the Kullens/Grantons. The handle on the other hand is a hard plastic that gets pretty slick under heavy use. I would pay more to see a handle more like a Dexter or a Fibrox handle like a Victorinox with a secure grip. It would be fine for light use as is. I fixed it by using a soldering iron to add stippling in places where I felt grip was needed. I like the way it feels now but I'm still not in love with the grip, on the other hand it does fit a standard 10 x 2.5 inch blade guard without modification where the Victorinox needs to have the blade guard cut out to fit the handle securely. Overall it's a nice knife for the money but I'm not sure if I would buy it again for a work knife."
