"I was previously using my Oliva Elite Utility Knife 6" as a steak knife and I bought this set so that I could have a proper steak knife and have enough to share with guests. These knives are sharp - they cut/slice through steak, chicken, pork, etc. without needing to saw back and forth or apply a lot of pressure. As with all of the Oliva Elite knives, the olive wood handles are extremely comfortable, finely finished, aesthetically pleasing, and a make the knives a joy to hold and use. I expect to own and use these knives for the rest of my life so for me that makes them well worth the price I paid for them. Care and Maintenance: I hand wash the knives with soap and water and dry them with a towel before putting them away. I use a honing rod after using the knives and before putting them away. These knives will stay sharp for a long time if you use a honing rod, and they sharpen up well (possibly sharper than new) on ceramic whetstones when needed. I applied a couple of coats of food grade mineral oil (USP mineral oil sold in grocery stores and pharmacies as a laxative) to the handles when I first got the knives to prevent the olive wood from drying out or absorbing too much water. I reapply mineral oil whenever the handles start to look dry, but you could probably let these go awhile without oiling if you want to. The attached pictures show the steak knife set laid out on a cutting board and also stored away in my Messermeister in-drawer knife holder (steak knives in top row, slots 1-4)."
