I have a Japanese chef knife and while it works well and is very sharp it can’t handle the same tasks as this knife. I went with this chef knife because it seemed to be pretty good quality and I wanted one that was a bit longer and was more robust to handle bigger tasks. This was the perfect choice and I don’t regret it an ounce! It has become my main chef knife and wicked sharp, even compared to the Japanese one!

Would love to share my experience! Take a seat! When I attended culinary school (Culinology, Allen Hancock college) there where 3 choices of knife packs to choose from given by our instructors with codes for discounts. I chose the top tier package with the Meridian elite chefs knives. This was about 7/8 years back. I am now in Florida and still have aspirations of a food truck or small brick and mortar. The Meridian Elite knives are still my favorites! I have a few Japanese knives for different tasks such as vegetables and breaking down poultry. The Messermeister knives are my go to knives though. Queue my recent purchase. My long time friend has a daughter that just graduated high school. She took culinary courses her last, senior year and even got her food handlers managers card. I got her the 8" Meridian Elite knife with her name engraved on it for her graduation present. She absolutely loves it! Her mom said that next to the car she bought her, this was the best present. A few years ago my nieces received the Meridian 8" knives from me for graduation. I couldn't find the standard knives this time so maybe they are discontinued. I will continue to be a user of these knives. They are sturdy, hold an edge, and take an edge well and have a great feel in the hand. Thanks Messermeister!!!

My first Meridian Elite 8" was purchased in 2001. I used the same knife for almost 20 years in a very rough environment on a daily basis, in a galley at sea. It withstood the test of time. What a quality piece of cutlery!

Knife is of great quality, though I’m disappointed with their customer service. That being said I’ll still purchase Messermeister items in the future. Just purchased a sharpening stone by Messermeister and I’m excited to used it. Knife lasted 5 months before having to sharpen. Only have been using their steel rod up to this point so I’m pretty impressed with how long it held it’s edge

I've owned the 10" Stealth version for a few years and used it every day. I love tools so I splurged on this model that is 10% heavier than the Stealth. The Stealth has sat in its edge guard ever since. I never worry about bending my new knife (although the Stealth is still straight). If I were doing more than just home cooking I might use the Stealth to lessen the stress on my chronic lower back injury.

Since I bought my first chef's knife in 1990, which was a 8" Wxxxxx Classic, I've always bought that brand. I like the weight and balance. I just tried out my new Meridian Elite. OMG! This feels even better and smoother. I'm a convert! I just wish I'd tried Messermeister a long time ago.
