Claudette Zepeda expresses her unique style in this 7" Chef's knife collaboration.  The knife design is lightweight and versatile.  Its warm Olive wood handle has a contoured pommel for a sure, comfortable grip with any sized kitchen task. Our 80/20 blade grind produces a thin yet rigid blade and the ballistic clip point adds strength to the tip.  The swept edge geometry and cambered handle make the knife exceptionally responsive and lively when used on a cutting board.  Staying sharp is key, so we used Nitro-cobalt steel which will hold a terrific edge that is easy to restore.

Care

Do not put in the dishwasher—ever. Hand wash with warm water and mild soap, then rinse and dry immediately.

Clean the blade right away after cutting acidic or salty foods (tomatoes, citrus, vinegar, etc.).

Wood handles: Apply a light coat of food-safe mineral oil or wood cream every few weeks to keep the handle conditioned.

Beautiful but Not Perfect

"I have to be honest and report that the knife came fairly dull, which wasn't what I was expecting at this price point. I was super excited to put it to the salsa test and it choked up into the first cut of an onion. I was unable to slice through tomato skin without hitting a honing rod first. After the fourth night of similar results, I switched back to my cheapo Kiwi Bunka for similar tasks. I love it and it WILL be a great knife with a little love, but I expected more out of the box."

Great Knife!

"The knife is wonderful! It has great balance and the right feel. I did a few prelim strokes on my sharpening stones and it seem to take an edge well. I have about two dozen carbon steel knives all either made by knifemakers or vintage (Sabatier, etc. ) and this knife will hold it's own. I have smaller hands and I prefer shorter knives for better control."
