"Have been using a santoku knife for at least 40 years. This is basically the Japanese version of a chefs knife. The style is quite versatile. The blade has a nice curve for working with fruit and vegetables. You can get a nice mince if you want. This knife is a bit lighter and the blade a bit thinner than it looks on the site. The balance is blade heavy. The handle is comfortable."
