Why Aren’t Knives Dishwasher Safe?

When you invest in high-quality kitchen knives, you want them to stand the test of time. One of the biggest contributors to deterioration of quality knives is the dishwasher, which is why hand-washing is always recommended. 

 

So why should professional chef knives always be hand-washed and never exposed to the harsh environment of a dishwasher?

1. High Heat Can Damage the Blade Temper

The dishwasher uses an extremely high heat water spray to clean and sanitize dishes. While great for plates and glassware, that heat is too intense for heat-treated knife blades. Most of Messermeister’s knife blades, like the Meridian Elite line, are heat-treated and tempered for optimal blade shape and hardness. While this heating and tempering process is a key factor in ensuring the knives are sharp and able to hold an edge, the extended exposure to the high heat of a dishwasher can alter the tempering on the blade, which can cause the steel to soften and make it more difficult to resharpen. 

2. Harsh Detergents Accelerate Corrosion

Dishwasher detergents contain aggressive alkalis, acids, and salts, which can contribute to corrosion on the knife blades. Over time, these chemicals can cause corrosion, pitting, or rust on the blades. Even stainless steel knives aren’t immune to this damage. Hand-washing your premium kitchen knives with mild soap and warm water preserves both the finish and the edge, helping your knife perform like new for years.

3. Dishwasher Movement Can Chip or Dull the Edge

Inside the dishwasher, your knife can easily knock against other utensils or even the rack itself. This jostling during the washing process can dull, nick, or even chip the knife edge of your finely honed blade. This movement could also cause your knives to damage your other cutlery or even the dishwasher itself, creating cuts in the lining, which could lead to premature rust. 

4. Wooden Handles Don’t Belong in the Dishwasher

While knife blades are susceptible to the high heat and corrosive detergents of the dishwasher, wood handles are also not suitable for the prolonged exposure to water. The high heat and warm, humid environment can cause wood handles to swell, crack, and splinter, destroying the beautiful luster and damaging the handle’s integrity and finish.

For the best care, wash your knives by hand with mild soap and water and dry them right away, as the prolonged water exposure in air drying could leave spots or cause rust on higher carbon knives.
