      <description>The two most popular trends in knives in the past 5 years have been the adoption of the Japanese Santoku as a main blade style and the use of a Damascus look to decorate blades. Now, you can have a santoku, a Damascus blade, and one of the most prized handle materials, micarta, all in the same knife . If you prefer a Chefs knife, we have it too!

These knife blades are constructed from the same super steel, (VG-10-composed of carbon, chromium, cobalt, manganese, molybdenum, silicon and vanadium) that is used in other highly prized Asian knives.       <description>The combination of industrial strength ceramic and a honing or alignment steel creates one of the best preventative maintenance tools possible for your knifes edge.  Ceramic is very hard and it has a slight abrasive characteristic so it can actually sharpen as it aligns the edge.  It also is more forgiving to the knifes edge because ceramic, due to its granular structure, will break away when a knife edge is passed over it.  This also exposes a new fresh surface which is more abrasive and a renewed sharpening medium.  Its the one steel that both sharpens and hones so any minor edge flaws may be corrected by making additional passes.

      <description>In recent times, Japanese cutlery, especially the Santoku, have become very popular knives. The one feature that is always pointed out is that they are extremely sharp. Part of this sharpness comes from less resistance when pushing or pulling a knife through a fruit or vegetable.
