a little about me:

 

Since early childhood; Andre Sickinger has been drawn to Indonesia and its mystical culture. There’s a strong sense of heritage there, connecting back to the mid-1920’s; where his great-grandfather, worked as one of the first practicing European doctors. Based in East Java, residing in a small village named Blora - this resilient and hardy character treated villagers, researched and wrote books about indigenous medicines of the Indonesian land, and manually built the area’s only hospital – which to this day, still stands.

 

Growing up, Andre found the kitchen a place of intrigue – spending countless hours with both his grandmothers’ (of German and South African descent) doing whatever he could to sample their traditional dishes. The food coming out of these kitchens was always grown from the garden, the aromas were wonderful and the plates flourished with an abundance of colors, textures and flavors.

 

Any time the family sat down at the table; it was the meals that brought about an immense love and laughter with everyone. This has resonated with Andre ever since.

 

25 years professionally catering, a private chef working across six separate countries, and extensive experience on the Indian Ocean working on-board elite charter boats – within the Indonesian archipelago - has all lead Andre to his current position as one of Australia’s most sought after ‘Clean Foods’ chef’s.

 

Whilst specializing in the tradition of Asian foods, his focus is on modernizing flavors – creating robust, palatable sensations sourced from sustainable, organic farmers and select providers of the world. Andre chooses produce that is sensitive to the planet and harmonious to the seasons, depending on region.
