Chicken Stuffed with Goat Cheese & Spinach Leaves

A “Messy” Recipe

This is a favorite from one of our Meisters!  It is a great easy dish.

Makes 4 servings


  • 4 boneless skinless chicken thighs
  • 4 oz of goat cheese
  • 24 fresh spinach leaves
  • Bread crumbs
  • 2 eggs


  1. Preheat over to 325 F and spray or lightly coat a glass baking dish with olive oil. 
  2. Whip the two eggs. Then dip the chicken in the whipped eggs and then roll them in bread crumbs.
  3. Lay out the coated thighs and add 1 oz of goat cheese and 6 spinach leaves to the top of each thigh.
  4. Roll up the chicken thighs and place them seam side down in the glass baking dish. 
  5. Bake for 35 to 45 minutes or until the thighs are cooked all the way through.

**To make this recipe more healthy, substitute chicken thighs with chicken breasts and use egg whites in place of whole eggs.

    I really love goat cheese desserts, their are awesome. If I have guests, I just make goat cheese deserts and they love it. Are there any other good uses for goat cheese?
